Slow Cooker Chili
My chili recipie for a slow cooker
Ingredients
Ground Beef
2lbs
Diced Onion
1
Garlic Minced
4 cloves
Chili Powder
2tbsp or to taste
Cumin
1tsp or to taste
Olive Oil
2tbsp
Bell Peppers
2-3
Tomatoes
1/2lbs
- Diced tomatoes from a can or fresh produce
Tomato Sauce
1 can
- Optional. Not required if you are using lots of tomatoes
Tomato Paste
3tbsp
Beans
3-4 cans
- Mix of kidney and black
Beef Broth
1.5 cups
- Optional, can be replace with water
Salt and Pepper
to taste
Carrots Diced
3-4 whole carrots
- Optional
Green Onion
to taste
- Finely cut and serve with Chili
Cheese
to taste
- Serve chili with cheese
Sour Cream
to taste
- Serve chili with sour cream
Steps
1. Start tomatoes, veggies and seasoning
Add all veggies and seasoning to slow cooker with beef broth and start cooking for several hours
- I've done this many times and cook time here can range anywhere from 2-4 hours
2. Brown Beef
Brown the beef on the stove, cook with onion and garlic and add small amount of seasoning. Once browned, add the beef to the slow cooker. Once added leave to cook in slow cooker for several more hours
- At this stage I leave it on the slow cooker for another 2-4 hours
- At the end of this stage, the chili should have cooked for 5-6 hours
3. Add beans
1-2 hours before the chili is done, add all beans to the slow cooker.
- I've learned you can do this up to 3 hours but be careful as if you do it too long, the beans will start to come apart
Notes
- This is a very hard recipie to mess up, in making this chili I have sometimes been way off on either ingredients or the timing and it's come out fine either way
- In the final step if you do overcook the beans it's not a huge deal, and some folks like it that way
- Once the chili is done you can leave the slow cooker on 'warm' for a little but but you should turn it off or else the beans will overcook.
